what kind of car? maybe it is leaking out of the hose right into the canister? or check the intake maybe your sucking antifreeze thru a vacuum line with a blown HG.

I do not see how coolant could enter the cannister unless you had a hose burst or one heck of a leak as the cannister vents the carburetor fuel bowl(s).

Was the engine been out of the car or worked on just before you noticed the a/f?

I've seen lines get put back on in the wrong places quit often. It happens to the best of us.

That is an unusual problem. My '73 has water in the charcoal canister, but there's a reason for that.

Are you sure it is coolant and not old fuel (with maybe clear water [condensation] mixed)?

The charcoal is not only a filter but also a dessicant. If and when it becomes saturated, it has to be changed.
