The only true street and strip racing tire is the M/T sportsman front runner.
Now for the value minded...... for years we have been able to use a P165-75-15 cheapie discount tire store with great results.
Usually about $40 per tire TOPS!
Less if you catch them on sale.

Would the P165-75-15 fit on a 15x7 rim, or would the rim be too wide? Also, what is the diameter of that tire?

No it won't fit a 7 inch wheel.
It's about 25 inches.

That's the old VW Bug's stock tire.

I tried them on my "other" car but they were too tall to clear the fenderwell headers. Since it is a "street" car I needed DOT tires and the Spm tires were all too tall.

I ended up with 185-60R15s on the front. They are mounted on 3.5" Centerlines and measure 24" tall. Check out the little radials, they can be speed rated too. It's kinda scarey to run 120+ on VW Bug tires.

I used to use that tire, 5.60x15s on my 65 way back when. I maxed out the speedo on a back country road! I was poor and stupid.

I am using 165/80/15 Kumho 758's on mine. I only run 1/8th mile tracks, and theses are rated for 120 mph, so seems to be good for $27 each.

Here it is beside my 275/40/17 Drag Radial.
