When milling heads and running thinner head gaskets can you just shim the positive stop nut by the amount you have milled and or lost by running a thinner gasket, or do you need to set it up different somehow?

just wondering how much tinkering would be involved in doing this to gain some compression. I know how to torque bolts, but not how to set up a hyd cam

Not sure if I understand your question... are you talking about adjusting "shimming" the rockers?

If that's your question, you will need to readjust the rockers after you change the head gasket. Unless they use a bolt, then the adjustment would get tight and you would need to add a shim under the fulcrum.

You could compensate by using shorter pushrods, and you'd determine the length you'd want by setting your rocker arm geometry.
