I use copper head gaskets on the Motor Sport 351W block in the 68 Stang and the block O'ringed as well. I think the head gaskets are about .042"

I don't know much about steel shim head gaskets, however I've read it's not recommended to use them in conjunction with aluminum heads... is this true?

Also, what header gasket is most popular nowadays?

On intakes I use a bead of black silicone at both ends with no end gaskets, I��ve never had an oil leak out of the intake manifold with this method.

I also use one peace ��Ford truck�� oil pan gasket that works real well and easy to change when checking bearings.

Mr.Gasket Ultra Seal, with a real thin bead of hi-temp silicone on both sides. Snug the header bolts down again after the motor is hot, and again after you drive it the first few times. You'll never have a leaky header gasket again

I use anti-seize on my header bolts, along with the above procedure. They don't back out at all

Here in the UK, we had an aluminium V8 for decades made by Rover. Basically it was the old 215 Buick engine with revisions. This engine had steel shim head gaskets and was very reliable with no unusual head gasket problems. HTH

Has anyone used Felpro wire-loc head gaskets with the reciever grove in the head? If so, whats your opinion of them...
