i will be ordering my wheels soon and i need to know what backspacing i should get?

I have 69 cougar mini tubbed, the wheels are 15x10, the tires are 30 tallx11.5 wide. I dont want the tires to stick out of the wheel wells because i dont want to cut the top of the wheel wells. the choices for backspacing are 3 1/2, 4 1/2, 5 1/2, 6 1/2, 7 1/2. Which one should i choose.

please help me out thanks.

Everyone's opinion of what "mini-tubbed" is, is different. Without any other details, assuming you didn't re-locate your leaf springs and assuming that the 11.5" dimension is referring to the section width and NOT the tread width -- I'd bet the 5 1/2" backspacing will be your pick.

You can get a better feel for what your combo should be by determining what backspacing you current wheels have and then measuring its clearances to the fender lip, leaf spring, wheelwell, etc. and use those measurements to determine where a different wheel combo would put the tire edges.

Also consider:
a) bias-ply slicks will grow taller but not sideways; radials and street tires don't grow as much.
b) the fenderwell-to-tire clearances will change when you drive onto car trailers, into driveways, over RR tracks, etc.
c) more air pressure, stiff sidewall tires, and inner tubes will help reduce the amount of tire squat at launch time.
d) if you can't run your finger between your tire and the fender/suspension, it's too close!

I have rear coilover shocks and in regard to mini tubbing i cut the factory tub in half and added sheet metal to the middle to widen it. Should i still get the 5 1/2 back spacing?

some tire stores have a fixture that sits on the hub and holds a tire of your size. It is then moved to simulate the best back spacing for your car. Doesn't hurt to ask your local shops.
I am running 15x10 with 5.5 back space on my Cyclone with 26.7x10 tires. I have not altered the wheel house at all.

Depending on how much sheet metal you added to the middle of the wheel well (1", 2" or 3+") & where you mounted the coilovers will determine how much backspacing you can handle.

The tool that 70spoiler talked about sounds like the way to get the best idea of what backspacing to go with, if you can locate a shop with one.........
