If i were to get aluminum heads with the 0 ring would i still have problems with them leaking oil/coolant in cold temps?

The o-ring only seals off the combustion chamber and I doubt that a oil leak would come from a head gasket. If a head gasket is leaking oil then you have more problems than you realize.
