How can someone with a 'glide, 'brake, and air-shifter really be "racing"? What does he/she do that constitutes racing? I thought you had to shift gears to race?

I won't knock it until I try it.
People running that setup are competing in PRO ET class, or a ".90 class" and it is very competitive. During the Div. 7 finals last year I watched them run at the finish line and they were so close I couldn't call the winners. MOV (margins of victory) were often within an couple thousanths of a second, and with throttle stops one car may be 30 mph faster than the other, which takes a tremendous amout of skill to "drive the stripe".
It definately would not be fair to use one of these cars against a manual transmission equipped race car in a bracket race. It's a whole different world. Not for everyone, but what is?
