I'm putting the interior back together in my Mach, but I have one question. I am going to have an Autometer tach in place of the factory one. Do I need to connect the two wires from the factory tach plug to complete a circuit or just leave the plug unhooked?

You will need to make a jumper for the plug. The car will not run unless they are connected. The tach completes the ignition circuit.
